It gets dark earlier, the terrace empties sooner, and the question becomes: where are we going inside? At Salut you do not need a plan for that. You just walk in.

Just walk in
We like to keep things easy and spontaneous: drop by, find a seat, and stay as long as you like. You can book, but you do not have to. On a weeknight there is almost always something free, and otherwise you wait at the bar until a table opens up.
Inside Salut
The interior is by Belgian designer Jean-Philippe Demeyer: floral panels, banquettes along the wall and red-and-white checked cloths. In summer everyone sits outside on the square; from October onwards inside is the better seat — though as far as we are concerned it always was.

What lands on the table
Start small: Fine de Normandie oysters, brioche with eel, Toast Cannibale or the gamba tempura. Then Moules Pastis, Crevettes Pil Pil, poussin or steak frites, with the leek gratiné alongside. With a group, share the côte de boeuf. See the menu.
Something to drink
Our own Cuvée Salut Chardonnay sits alongside a changing selection of wines by the glass, so there is always something to discover. Prefer something alcohol-free? Just ask — we have a list for that too. See the wine list.

And to finish
Cheesecake, chocolate mousse, or the Manchego if you would rather end on something savoury. That cheese is a craft of its own was proved again on 24 September, when Chantal Cazemier, fromager and sommelier at Restaurant Ratatouille in Haarlem, won the Dutch Fromager of the Year title with a cheese-and-wine pairing (De RestaurantKrant).
When to come
Salut is open Tuesday to Sunday: from 3 pm on Tuesday and Wednesday, and from noon Thursday to Sunday. We are closed on Mondays. You will find us on Gerard Douplein, around the corner from the Albert Cuyp Market. Address and opening hours.
Coming with a group
For seven people or more, or a private event, it helps to let us know: email info@salut-official.com or send a WhatsApp.
